Happy Friday!

Happy Friday everyone! I thought I would share this recipe that I came up with in attempt to feed my boyfriend something other than just plain old chicken and rice! This is one of my favorites. Even Tyler loves it (I know this because he even requested it the other night!). Anyway it's really quite simple and it doesn't take long to put together!

Baked Chicken Stuffed with Baby Spinach, Parmesan Cheese and Italian Seasoning

What you will need:

Boneless Chicken Breasts ( we buy ours in bulk from Costco)
1 Pack of Frozen Baby Spinach
Shredded Parmesan Cheese
Italian Seasoning
Ground Pepper

Pre-Heat oven to 350

Step 1: Slice thawed out chicken breast from the side so there is a nice pocket. I find it works best if you make your slice in the shape of a smiley face!
Step 2: Steam your frozen baby spinach so that it is nice and soft.
Step 3: Combine baby spinach, about 1/4-1/2 cup of Parmesan cheese (depending on how much chicken you are making this can vary) and Italian seasoning. Mixing all these together melts the cheese from the heat of the spinach.
Step 4: Stuff your chicken so that it looks like the picture above!
Step 5: Salt, pepper and a little bit of Italian seasoning on the outside of the chicken breast.

Place in baking dish (I have the pampered chef stoneware rectangular baker) and bake in oven for about 20-25 minutes.
